Crab Cakes
1 pound crab meat, flaked
3/4 cup cracker crumbs
1 large egg, lightly beaten
2 tablespoons minced onion
2 tablespoons mayonnaise
1 tablespoon Worcestershire sauce
1 tablespoon prepared mustard
4/3 to 1.5 teaspoons hot pepper sauce
1 teaspoon salt
1/2 teaspoon freshly ground pepper
Mix all ingredients (except salt and pepper) in medium bowl. Form into 3-inch patties and roll in additional cracker crumbs
Heat oil in skillet to 375 degrees and fry patties until golden brown (3 minutes per side). Drain on paper towels and serve.
